Morning of surprises.

This morning at around 11 we got a knock on our door. Jason got really excited telling me to hurry and open it because it was the FedEx man bringing his birthday present. I jumped up and the doorbell rang again and there was continuous knocking. I opened the door and instead of the FedEx man there was a police officer!
"Is Jessica Fuentes here?"
I quickly told him that she did not live here. He then asked which one of us had lived here longer. I told him we were married and that we have lived here since the end of last August. The officer looked a little bit shocked. He asked if we had ever met Jessica Fuentes, which we haven't. We told him that we had been receiving their mail and phone calls for the past year and have always written "Moved, Please FWD to new address." He asked if we had a forwarding address for Jessica, and of course we didn't! We told him to check with the office and maybe they did. The officer then said, "Well, if you hear from her... Nevermind." Then he left.
Honestly, we have been getting Jessica & Alberto Fuentes' mail and people have been calling for them for a year now.

That was the first time I have ever had a police officer come knocking on my door. I am certainly glad that he wasn't there for me and I hope I never do anything that would warrant a police officer to come to my home in the first place.

School

School is almost over for Jason and I! Well, at least for the summer. My classes have been somewhat easy for me this block of the summer. I am taking a British Literature class right now which is really great! The classes sometimes put me to sleep, but only because it's late in the day and I am in need of a nap by that point.
I am also taking a public speaking class which is pretty fun. I get really stressed out right before the speech and then kind of forget about my stress during the speech, and then right after the speech I get a little stressed out again. Haha. I think I am doing pretty well in both of the classes. I am finished with these classes on Friday but Jason's classes go until next Wednesday!

On a happier note, Jason wants to go on a vacation. He told me to find somewhere to go and we could go there in between semesters. I really wanted to go to Disneyland, and Jason suggested Montana. After thinking about it, we decided we should go up to Montana to visit Jason's parents. My family is from Orem and I see them every other day, and I figured since we had a break it would be nice to go visit the family we don't get to see every other day.

We are going to go to Yellowstone park for the first two days and then just relax at Denny and Rita's! I am soooo excited!!!!! I love Montana, and neither Jason or I have been to Yellowstone in a really long time!

Chicken Enchilada Soup

I made Chicken Enchilada Soup for dinner this evening. It didn't take too long and it was incredibly delicious! Jason said it was just as good as El Burrito's enchilada sauce, and was an amazing soup!
It had a tiny zing to it, but it wasn't super spicy. For those of you who don't know me very well, I have very sensitive taste buds, I like spicy things, but only to a certain degree. Jason on the other-hand loves spicy spicy things. We both loved the soup! It's great with tortilla chips and french bread! It's very filling and can be used as chip dip.

Here is the recipe:
1 pound skinless, boneless chicken breast halves
1 tablespoon vegetable oil
1/2 cup diced onion
1 clove garlic, minced
1 quart chicken broth
1 cup masa harina (corn flour)
3 cups water, divided
1 cup enchilada sauce (old el paso medium red enchilada sauce)
2 cups shredded Cheddar cheese
1 teaspoon salt
1 teaspoon chili powder
1/2 teaspoon ground cumin (I used about 1 1/2 tsp)

1. In a large pot over medium heat, cook chicken breasts in oil until well browned on all sides. Remove and set aside.
2. Cook onion and garlic in remaining oil until onions are translucent. Pour in chicken broth.
3. In a bowl, whisk together masa harina and 2 cups water until well blended. Pour into pot with remaining 1 cup water, enchilada sauce, Cheddar, salt, chili powder and cumin. Bring to a boil.
4.Shred cooked chicken and add it to the pot. Reduce heat and simmer 30 to 40 minutes, until thickened.

Zupas? Chili's?

If you have ever been to Zupas in Provo, or Chili's this might look a little familiar.
It is chicken enchilada soup and both Zupas and Chili's have fantastic variations of the soup. It is spicy, but nothing too bad, and has the warm wholesome goodness that comes with soup. The soup in the picture is actually a home-made chicken enchilada soup. I have not yet made it, but I plan on it sometime this week. I hope it turns out as good as it looks!!!

Guitar Hero

A couple of months ago we went to one of Jason's friends, Seth and Mariah, for FHE and played guitar hero. It was so much fun! Jason got the hang of it pretty quickly and it took me quite a while... Haha, I kept getting boo'd off the stage. Seth and Mariah however were amazing!
A couple of weeks ago we went back for another friend's birthday, and played guitar hero again. I didn't play, but Jason did and he had really gotten the hang of it, I was quite impressed.
About a week ago Jason and I decided that guitar hero would be a great game to have. It would be a game both of us could play, we would become more educated on rock music, and learn hand eye coordination all at the same time. Needless to say, we got the game. We actually got guitar hero 2 & 3 plus 2 guitars and played it pretty much non-stop.
We played GH2 on Easy and beat it! (I even helped!) As soon as Jason started getting 4-5 stars on each song, he changed to medium, while I stayed on easy practicing so that I could move up as well. I'm still not super good, but I can play most of the easy songs on medium. We then (mostly Jason) beat it on medium! As soon as we (he) did that, we (HE) went onto hard. Those songs are extremely difficult!!! Therefore we have put the game on pause for a couple of days, so we can start hard with fresh minds and fingers, and then when (or if) we beat it on hard, we will go on to GH3. Anyone want to come over and play??? (Open invitation)

On Saturday I threw a baby shower for my friend Shea. (My first friend in the ward.) It was my first time throwing a baby shower and it was sooo much fun! My camera actually died in the middle of it so I don't have a ton of pictures, but I did get a few.
Two days before Shea and I made a cake for the shower. The cake is amazing! We also decided to make fondant to make the cake look awesome.
We had some fun games! We froze some plastic babies in ice and had each girl try to melt the ice and whoever had their "water break" first would win a prize. It was really fun, and then a girl cheated by biting it and breaking the ice off the baby. We also played the diaper game... A different version than I was used to. In this game we got six diapers and six types of baby food that kind of looked alike. We the food in the diapers and everyone had to smell it and guess what it was. So many girls looked like they were going to be sick because we had green beans and it looked like baby poop. This is Shea smelling one of the diapers.

I forgot to buy decorations, so the morning of I hurried and made my own hanging BABY SHOWER decoration. I bought baby diapers to try to make a diaper cake, but by the time I was finished with the BABY SHOWER decoration I had to run over to help finish the cake,
cut up some fruit, and help carry over the salad and such. We had to stop by my place to pick up a knife for the cake and the frozen babies. While I was gone Jason made the diaper cake! It turned out amazing! I'll let you see for yourself!


We had so much fun, and it turned out great!
